Salta och peppra  fl\u00e4skfil\u00e9n och bryn i olja och sm\u00f6r i en het stekpanna tills den f\u00e5tt fin f\u00e4rg. L\u00e4gg \u00f6ver k\u00f6ttet i en ugnsfast form och stek f\u00e4rdigt i ugn p\u00e5 120\u00b0 tills den \u00e4r l\u00e4tt rosa och har en innertemp p\u00e5 75\u00b0 (eller \u00f6nskad stekgrad). L\u00e5t vila 5 min innan den sk\u00e4rs upp.<\/p>\n<p>Stek bacon i en stekpanna utan fett tills det b\u00f6rjar bli knaprigt.<\/p>\n<p>L\u00e4gg i l\u00f6k och vitl\u00f6k och stek i ytterligare 2 minuter. S\u00e4nk v\u00e4rmen och h\u00e4ll i vin. Koka i n\u00e5gra minuter och h\u00e4ll p\u00e5 kalvfond, vatten och rosmarin, l\u00e5t koka tills h\u00e4lften \u00e5terst\u00e5r. L\u00e4gg i oliver och rivet citronskal. Smaka av med sm\u00f6r, salt och peppar.
